K's Fried Rice
Protein - Chicken/ prawn
Serves - 3-4 hungry teenage boys
3 cups long grain rice cooked
1 medium size onion finely chopped
1 carrot gated
250 gms of cabbage finely chopped
250 gms of French beans finely chopped
1 sprig celery finely chopped
1 green bell pepper finely chopped
1 tsp Ma's minced garlic
1 Ma's chicken stock cube dissolved in 1/2 cup of water
500 gms of boneless chicken diced
2 tbsps sesame oil
Heat the wok before you add the oil in to start cooking . Add onions and garlic and cook for about 2minutes. Then add the french beans and cook for about 5 minutes.
Add carrots, cook for another 2 minutes, then add cabbage and chicken stock and simmer till this mixture has very little stock left in it.
In the meantime brown the boneless chicken in a saucepan with 2 tbspsof sesame oil. Brown on both sides but don't overcook as that will make the chicken dry.
By now the vegetable mixture should have cooked. Add the green bell pepper and chicken and cook another 2 minutes. Finally add rice, salt and pepper, mix well and cook for another two to three minutes till the flavour of vegetables has been absorbed by rice.
Send for snack in an insulated lunch box to keep the food warm and fresh.
