K's Potato Parcels
Serves - 3-4
500 gms potato boiled
1 medium size carrot cubed and boiled
1 medium size onion finely chopped
1 tsp MA's minced garlic
1 tsp MA's minced ginger
Handful of fresh coriander leaves
Handful of fresh basil leaves
1 tsp sweet chilli sauce
1 tsp roasted sesame seeds
1/2 tsp MA's turmeric
Salt and MA's pepper to taste
Spring roll sheets
Oil for cooking
In a pan put some oil and saute onions, ginger and garlic till onions are slightly transparent and pinkish . Add the potatoes ,carrots,coriander leaves, basil leaves and sweet chilli sauce salt to taste and cook for about 5-7 minutes. Now add roasted sesame seeds cook for a minute remove from fire.
Spread out a spring roll sheet and place 1 1/2 tbspsof the mixture on this. Wrap the sides to form a rectangle. Repeat for the other sheets till the filling is finished. Then in a shallow flat pan pour some oil and fry about 4 at a time.
Remember these are not deep fried - they are lightly cooked. Each of these should be browned evenly on both sides. As they are not deep fried they will not get soggy at least for few hours after cooking . Serve hot with sour cream on the side if serving at home.
