NOTE BY K :  This dish was created by a bunch of expat kids who found our Kottu way to spicy but loved the roti . One afternoon 10 teenagers and myself came up with this, it has been a big hit since with  my kids and their friends.


Protein -  Chicken
Serves -  2-3 hungry teenagers 

ingredients:
1 pack of Prima Kottu (found in freezer section)
500 gms of boiled and shredded chicken
1 grated carrot
250 gms of shredded cabbage
1 green bell peeper finely sliced
Handful of fresh basil leaves
Handful of fresh oregano leaves
3 bay leaves
1 tsp MA's minced garlic
2 dried red chillies
Half a of chicken stock
A cup of grated cheese
Quarter cup fresh cream
2 tablespoons live oil

In a saucepan add oil put the red chillies in to flavour oil add bay leaves , garlic till the oil gets aromatic . Add the vegetables and chicken and chicken stock till the stock is half dried. Now add the rest of the herbs and the kottu. Cook for about 5-7 minutes till the flavour is absorbed by the roti, keep stirring whilst cooking on slow fire . Add the cream and cook for about a minutes, remove from fire and pour the cup of grated cheese over the Kottu. Stir in the cheese, this way the cheese will not form lumps and be evenly spread.  If you don't want to use the frozen Kottu , buy some fresh godamba  and shred it.
