K's Italian Kottu

This dish was created by a bunch of expat kids who found our Kottu way to spicy but loved the roti. One afternoon 10 teenagers and I came up with this, it has been a big hit since with my kids and their friends.

Ingredients

For 3 Person(s)

  • 1 pack Prima Kottu (found in freezer sections)
  • 500 g Boiled and shredded chicken
  • 1 Carrot, grated
  • 250 g Cabbage, shredded
  • 1 Green bell pepper, finely sliced
  • 1 handful Fresh Basil leaves
  • 1 handful Fresh Oregano leaves
  • 3 Bay leaves
  • 1 tsp MA's minced garlic
  • 2 Dried red chillies
  • 0.5 Chicken stock
  • 1 cup Cheese, grated
  • 0.25 cup Fresh cream
  • 2 tbsp Olive oil

Directions

  1. In a saucepan add oil and add the red chillies to flavour the oil
  2. Add bay leaves, garlic till the oil gets aromatic.
  3. Add the vegetables and chicken and chicken stock till the stock is half dried.
  4. Now add the rest of the herbs and the kottu.
  5. Cook for about 5-7 minutes till the flavour is absorbed by the roti, keep stirring whilst cooking on slow fire
  6. Add the cream and cook for about a minute
  7. Remove from fire and pour the cup of grated cheese over the Kottu.
  8. Stir in the cheese, this way the cheese will not form lumps and be evenly spread.  

Recipe notes

If you don't want to use the frozen kottu, buy some fresh godamba and shred it.
